How to make Double Chocolate Loaf Cake by Jonathan

I chose this recipe because it sounds very good and I think that people will enjoy it. I think that this recipe is a little complicated but it is not too complex. I think that kids and parents will enjoy making it. It is a very interesting cake but I think that it would be a good idea to make the chocolate drizzle a different flavour of chocolate than the flavour of the cake.



Double Chocolate Loaf Cake

Ingredients:
  • 175g softened butter, plus extra for greasin
  • 175g golden castor sugar
  • 3 eggs
  • 140g self-rising flour
  • 85g ground almonds
  • Half teaspoon of baking powder
  • 100ml milk
  • 4 tbsp cocoa powder
  • 50g plain chocolate chips or chunks
  • Few extra chunks white or plain or milk chocolate for decorating


Method
  1. Heat oven to 160C/140C fan/gas 3. Grease and line a 2lb/900g loaf tin with a long strip of baking parchment. 
  2. To make the loaf cake batter, beat the butter and sugar with an electric whisk until light and fluffy. 
  3. Beat in the eggs, flour, almonds, baking powder, milk and cocoa until smooth.
  4. Stir in the chocolate chips, and then scrape into the tin. 
  5.  Bake for 45-50 minutes until golden, risen and a skewer poked in the center comes out clean.
  6. Cool in the tin, and then lift out onto a wire rack over some kitchen paper. Melt the extra chocolate chunks separately in pans over barely simmering water, or in bowls in the microwave, and then use a spoon to drizzle each in turn over the cake. Leave to set before slicing.
Review: This recipe is very good, but it takes a little longer to bake than the allotted time. It is slightly crunchy and it is very chocolatey. It isn’t good if you leave it out on a counter or a table.
